mmm me use the 1 cave yan zhan (literally whole bird's nest) each time and cook 1x a week.
1) soak them in warm water for 1.5hrs.
2) Use this same water and cut out the thicker edges. (the thicker edges look ugly and some pple avoid buying them, but in fact, they have the most potential for expansion, and from my observation, they expand to ~4x compared to dried form, so we get much more volume and birds nest upon boiling)
3) Just barely cover the thick edges with the soaked water, in a small ceramic container to keep it concentrated. Add 1-2 pieces of American ginseng if u want.
4) Double boil the thicker edges for ~40mins while keeping the remaining soaked in water (outside the pot).
5) Check after 40mins and increase soak time if needed. Once the double boiled thicker edges have the same texture as the un-boiled thinner edges, add the thinner edges to the ceramic contained and continue double boil it for ~2hrs or until the texture turns into a transparent colour.
6) Then add sugar to taste, let the birds nest cool before refrigerating.
7) Use a dry tablespoon and take it every night / day.
For me, 1 piece of cave nest can last me 8-10tablespoons for 6 days.
We can keep it for ~1 week in the fridge w/o spoiling..
Btw, the soak and double time is only applicable for cave nest.
If use house nest, soaking time is ~20mins, cooking time is only 1hr max cos of difference in composition.
I stopped using house nest since it's supposed to be more liang, but my info is only from 1 source and experience.
